Ingredients:
- 1 medium-sized pumpkin
- 3 tablespoons Honey Island honey
- 2 tablespoons olive oil
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- A pinch of salt
- A pinch of pepper (optional)
Preparation:
Preheat the oven to 200°C (392°F).
Cut the pumpkin, remove the seeds and skin, then dice it into medium-sized pieces.
Seasoning:
In a large bowl, mix together the olive oil, Honey Island honey, cinnamon, nutmeg, salt, and pepper (if using).
Add the diced pumpkin and toss well to coat every piece with the honey-spice mixture.
Baking:
Place the pumpkin pieces on a baking tray lined with parchment paper.
Bake for 25-30 minutes, or until the pumpkin is soft and caramelized. Turn the pieces halfway through baking to ensure even cooking.
Serving:
Serve warm, and if you like, drizzle a little extra honey on before serving.
