Ingredients:
- 3 cups rolled oats
- 1 cup nuts (almonds, walnuts, cashews)
- 1 cup seeds (sunflower seeds, pumpkin seeds)
- 1/2 Honey Island honey
- 1/4 cup coconut oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- A pinch of salt
- 1 cup dried fruit (raisins, cranberries,apricots)
Preparation:
- Preheat the oven to 150°C (302°F) and line a baking tray with parchment paper.
- In a large bowl, mix the oats, nuts, seeds cinnamon, and salt.
- In a smaller pot, melt the honey and coconut oil over low heat, then add the vanilla extract.
- Pour the honey mixture over the dry ingredients and mix thoroughly to coat everything well.
- Spread the mixture evenly on the baking tray and bake for 25-30 minutes until golden. Stir halfway through baking for even cooking.
- Remove from the oven and let cool completely. This is when it becomes truly crunchy.
- Stir in the dried fruits.
Serving Tips
You can enjoy honey granola on its own, with milk or yogurt, but it also pairs excellently with smoothies or sprinkled on top of desserts. Make granola bars from it if you want to enjoy it on the go.
